Our idea of kitchen travels in perfecy harmony with the wine and champagne selection that we offer. We want to tell stories about near and far away lands that can make the time spent with us an always new experience through colours, materials, ingredients, taste and scents.

A true local, after his training and working all around Europe in prestigeous restaurants he decided to share the philosophy of Panta Rei, without abandoning his natural inclination to the research of fine tastes and the celebration of raw materials in cooking. His cooking has a contemporary approach, but also deep roots in tradition.

Great expert of our territory, he has a refined cooking technique that transpires from his creations. His dishes, never ordinary, match perfectly the large wine selection that you can find at Panta Rei.

Fine selection of cured meats and dairy products, made in collaboration with the best meat producers and cheese affineurs, from Italy and Europe's most exclusive farms. Knife-cut ham, patanegra, tuscan finocchiona, capocollo, buffalo mozzarella, burratine, blue-veined cheese...

Also at Panta Rei you can breath sea air, we offer sea specialties with the best quality ingredients from Italy and abroad. Tartares, carpacci, sliced fishes and croutons with scallops, shrimps, kingfish, salmon, octopus, norway cod, oysters, eels, trouts, caviar, anchovies from the Cantabrian Sea...

The enhancement of “simple” products has always been one of our goals and thanks to the mastery of our chef we are happy and proud to offer a wide selection of rich and tasty soups and veloutès, made with short-chain products such as potatoes, carrots from Polignano, tomatoes, cauliflowers, spelt...

Our curiosity leads us to constant research, experimentation and creation to make our guests happy of every bite and sip.

Like in the philosophy of "everything flows" also our menu is continuously "moving". We always add seasonal products, renew our offer and evolve, just like the "flowing time" does with us.
